Flay graduated from the French Culinary Institute in 1984 as a member of the inaugural graduating class with a degree in culinary arts. He started off as a sous-chef at the Brighton Grill on Third Avenue after graduating from culinary school and rose to the position of executive chef. After that, Flay worked at Bud and Jams for restaurateur Jonathan Waxman, who introduced him to Cajun and southwestern food.

From 1988 to 1990, Flay served as the executive chef at Miracle Grill in the East Village, where he made a comeback to the kitchen. In 1991, Jerome Kretchmer, a restaurateur, took notice of him and offered him the executive chef post at Mesa Grill. Flay and Laurence Kretchmer opened Bolo Bar & Restaurant in the Flatiron District in November 1993.

Flay opened an American Brasserie called Bar Americain in Midtown Manhattan in 2005 after opening a second Mesa Grill at Caesars Palace in Las Vegas in 2004. He opened a third Mesa Grill in the Bahamas, at The Cove at Atlantis Paradise Island, and Bobby Flay Steak at the Borgata Hotel Casino & Spa in Atlantic City, New Jersey, as part of his ongoing restaurant expansion. Flay’s sole Michelin star, which he received in 2008 for the Las Vegas Mesa Grill, was revoked in the 2009 edition.

In addition to creating the Bobby Flay Scholarship in 2003, Flay has served as a visiting chef and master lecturer at the French Culinary Institute. Each year, a student in the Long Island City Culinary Arts Program receives this full scholarship at the French Culinary Institute.
